Chicken Cups

I got this recipe from Jenny's blog. Except that I altered it hugely. But then I made them like her recipe. As well as another hugely altered way.

Okay let me backtrack.

Last Thursday, we had BBQ Chicken Cups for dinner. They were quickly proclaimed to be J's favorite thing I have ever made. I happen to love them as well, although I wouldn't say they are the best thing I have ever made ;-)

Recipe is as follows:

2 chicken breasts, cooked and chopped
1/2 a medium onion, chopped
1 green bell pepper, chopped
BBQ sauce (I totally estimated on the amount)
1 can buttermilk biscuits (10 biscuits)
shredded mozzerella cheese

Sautee peppers and onions, mix with chicken, and add BBQ sauce until it looks like enough.

Press each biscuit into muffin cups, scoop mixture into cups until each is filled. Sprinkle mozz on top. Bake according to biscuit directions.

Voila. BBQ chicken cups.

Then on Halloween, we had a small dinner party type of gathering. I made these, but I also made the original cheesy recipe Jenny blogged about, as well as a taco variety. You can find the cheesy chicken recipe on Jenny's blog with the link I provided.

Here is the taco recipe.

1 lb ground beef
1 bell pepper, chopped
1/2 medium onion, chopped
1 packet taco seasoning
shredded mexican cheese
1 can biscuits

Sautee beef, peppers, and onions with taco seasoning. I don't know if you need a whole packet, I buy it in a big jar at BJs and just sprinkled a bit in.

Prepare biscuits in cups like before, scoop beef mixture in and sprinkle Mexican cheese on top. Bake according to biscuit package.

They were all delicious. The two other wives at the party demanded the recipes, and the men couldn't stop eating them. They even pulled the leftovers out of the fridge later in the evening for round two!

These will become a new staple in our house, I can tell. And there are so many ways to make them, the possibilities are endless! After talking to another friend about them, the next varity will be honey mustard of some sort. I'll let you know how those go as well :-)

~PS, sorry for the horrible photo quality. They really don't do the cups justice~
